Yumm!

I found this amazing recipe for phase 1! It's called Mock French Toast, and I will give you the recipe in a minute. I have been doing okay with the diet so far. Although, since I am a student, I have a hard time with breakfast. I have to be at school early, and I am usually up late doing homework and stuff, so I don't want to get up ridiculously early to try and make a huge breakfast. That time is better spent sleeping, let me tell you. So far, I have been able to grab some cottage cheese or something, and then I get a couple eggs at the cafeteria. But, it is still something on the run, and I don't know what kind of oil they are using. Plus I had a sausage link today, because it looked like turkey sausage, but I don't know that for sure. It could have easily been pork, which would have been off-limits. In any case, the rest of my day was good. I had spagetti sqaush with homemade sauce for lunch, and I had the mock french toast for supper. It was awesome! I loved it, it will be something I make again!

Mock French Toast
4 egg whites
1 egg
1/4 cup ricotta cheese
1 tsp vanilla
1 tsp Splenda (or other sugar substitute)
1/2 tsp cinnamon

Spray a frying pan with Pam (or other oil spray).
Pour mixture in like pancakes, flip when almost cooked through.
Put a little margerine on it, and some sugar free syrup.
Tastes really close to the real thing!!

On paper... Sigh

So today I measured myself. Had to put it all on paper. Sigh. Oh well. I also started the South Beach plan today. Let's hope all goes well.

Ow...

So how does it work that I did the ab routine yesterday, and today my thighs are killing me? I really don't get it. Although what I do get is that if I have sore muscles, I must have been working them right? At least I hope that that is what it means. Can't see what else it would be. I was going to wait to start South Beach, and just start with working out. But, I figure, diet and exercise is always what is recommended, right? So really, I should be doing them both together. For real. So I think I will give myself the rest of this week to get rid of what I can, and whatever food I have left that I can't have will have to go to someone else. I really should not have it in my house, because then I will not be tempted. Right? Except for all those places out there where I will be tempted, like school, and work, and all that. Oh well... Got to start somewhere. And I have started, which is nice. 3 days in a row of a 10 minute work out. And even though I'm not started on South Beach yet, I am already watching carbs, and portion sizes, which is something I really have never done. So I am proud of myself already. As my friend H would say, Damn I'm good!

So here goes!

So. I have been overweight, or at least somewhat overweight for most of my life. I have a lot of bad habits, and have never given an honest effort to change. I am a nursing student, and I am expected to help patients with their physical and mental health. How am I supposed to help them, when I can't even help myself? There are a number of things I need to change.

1. I need to stop smoking (it's a terrible habit, I know)!
2. I should lose some weight. (Okay, a lot of weight).
3. I need to be more active.

Most of all, I would like to have a life that includes more than sitting around at home doing nothing. Sigh. Which is what I do now, isn't it sad?

So here goes. By putting this out here, somewhere where someone can see it other than me, I will have some extra motivation. Hopefully. The plan is twofold. I have everything I need to start on the South Beach Diet. (Well, almost everything, need a couple of things yet.) I also have a copy of Ten Minute Trainer. I figure by using both, I should be able to get goal number one and two started. Of course, the stop smoking part needs to happen too, and I'm pretty sure that will happen on its own. I am not a heavy smoker, never have been, and I'm always on and off. Smoke for a few months, quit for a few months. And if I don't leave my house, I don't smoke either.

So really, I just have to get started. :) Here I go!
